Healthy Chicken Salad

Happy Superbowl Sunday everyone!!

I hope you are all enjoying lots of great football food, filled with nachos, cheese, hot sauce, and calories! You might wake up feeling pretty guilty about your football food choices and I wanted to give you all a recipe to help ease that guilt.

Here is a great recipe for a healthier version of the classic chicken salad:

Ingredients you will need:

1 pound of chicken breast chopped
1/2 cup of diced red onion
1/2 cup of diced apple
2/3 cup of grapes halved
1/3 cup of Craisins
1/4 cup sliced almonds
1/2 cup plain Greek yogurt
1 and 1/2 tablespoons of lemon juice
1/2 teaspoon garlic powder
salt and pepper to taste
Your choice of bread for serving - I like Pepperidge Farm deli flats

Tools you will need:
Measuring cups

Sharp knife
Bowl
Spoon

This one is an easy one!

Begin by cooking your chicken in the oven and chopping it into small pieces.

Prepare your diced onion, apple and halved grapes.

Mix all of your ingredients together and serve on your choice of bread - or crackers!
